Banana Muffins - Wheat/Gluten Free

Finally the perfect gluten free banana muffin recipe! Light, fluffy, sweet, comfort  food.  Enjoy!

1 cup of sugar (seems a bit much to me so  will be reducing this)

1/2 cup melted butter

3-4 tbsp of milk

2 eggs

1 tsp baking soda

1 tsp baking powder

1 cup brown rice flour

1 cup of  large flake gluten free oats ground into flour

1 cup of mashed overipe  banana (approx 2 bananas)

1 tsp vanilla

options-  sprinkle in a bit of oat bran or ground flax seed

Mix sugar, melted butter, 2 eggs, vanilla, milk and mashed banana in a bowl. In a separate bowl mix ground oats, rice flour, baking soda, baking powder, and optional ground flax seed or oat bran. Combine dry ingredients with wet ingredients and mix just until combined. Fill a 12 cup muffin pan.

Bake at 350 for 18- 20 min. Makes 12 muffins.
